Like many businesses, we have thought long and hard about our role in the marketplace. Our marketplace has become significantly tougher in recent years, partly due to things such as the Atkins Diet which has left all carb producers with a headache and partly due to the foreign imports which are flooding the country.
One of our strengths has always been the close relationship we have enjoyed with our customers. The other has been our ability to make bespoke breads.
It started many years ago, with chefs asking us to provide specific breads to match specific dishes in much the same way that a Sommelier will select a customer's wine. Later, as our frozen wholesale developed, a customer approached us who was using a baguette for a plated main course sandwich. Whist the customer had no problem with the style and flavour of the baguette, she mentioned that they had to cut the ends off for it to fit the plate. She was delighted when Maison du Pain offered to make one the exact size she required.
Since then, much of our work has been in the bespoke areas, making a specific product for a specific need either as a one off, or as part of a continuing menu development (mostly explained under Philosophy).
