Background

What makes good bread?

The simple answer is time. Good ingredients, good practices and a little bit of care and attention.

Of course, in business today, time is money. If something can be made quickly, most businesses will follow that theme, but at Maison du Pain we realise that if we want our bread to stand out from the crowd we have to spend time to "craft" our products, unlike some of the cheaper, mass produced products from abroad.

Subsequently, all products are either hand-made or hand-finished. Processes within the factory, whilst technically advanced and cutting edge, remain as old as the art of baking itself; we touch the dough, we smell the dough, we watch the dough.

Bread is very simple. Flour, water, yeast, salt are the basic ingredients. Give them time to develop and the flavour will come through.

Bébé Rolls

This is a range of restaurant and fine dining rolls. All products in this range are around the 40g mark and for many years these were staples in the range and the product we made our reputation on.

We started with a range of 3 white and 3 brown rolls. Small and home made looking, these were the perfect accompaniment to those late 80's Nouvelle Cuisine 'pictures on a plate'.

As tastes and consumer expectations increased, so our range continued to develop to encompass over forty different flavours

After a while we reluctantly agreed to add some flavours to our products - onion and walnuts and herbs - and the die was cast. The more varieties we thought up, the more we sold. Now we produce Pesto, walnut and sultana, olive, pecan and date, rye and of course sun-dried tomato.

Baguettes

This is a commodity market with price points having fallen by up to 70% over the last 5 years. This market is totally price driven which is not the environment where Maison du Pain naturally thrives.

The entire white baguette market is now a commodity market, and not our key focus. Maison du Pain has strived to add value to the market with a range of exciting flavoured products, either to complement a brasserie-style bread basket, or as a value added sandwich.

Loaves

We manufacture a wide range of flavoured loaves including Pecan and Date, Pesto and Sun Flower.

Speciality

Due to foreign travel and a resurgence of interest in bread in the retail sector, the general public is better informed about bread than they have ever been. Maison du Pain tries to keep ahead of the game by producing bespoke versions of breads such as Ciabattas and Focaccias and Pugliese breads. The common link is doughs that are rested overnight and re worked the next day - TIME- being the important ingredient here.

These products are still virtually hand made, but have flavour and authenticity in abundance.

Bespoke Burger Buns

Our largest growth area at the moment is on burger buns, where we have successfully persuaded a large number of customers to switch from cheap mass produced buns to value added bespoke buns.

It is our aim to be the Bun supplier of the discerning customer.

Frozen

All the above products are available in boxed and frozen form in pallet quantities. We are always happy to discuss the format with the customer.

Bespoke

Probably the most important aspect of our work. This is where we have a chance to shine against our cheaper competitors.

Maison du Pain, for the right volumes, will design and create a bespoke bread for our customers. We are fast and efficient and work on this basis with both large and small customers.
